Description
Eastern European/Jewish potato cakes (a bit like bhajis)

about six, depending on size of veg.
1 med/large potato, grated 1 small carrot (optional)1 med onion, roughly chopped1 beaten eggflour to bindsaltpepperspices e.g.paprika (optional)
Method/steps
- peel/scrub veg
- grate potato (and carrot)
- slice onion
- Heat 3 or 4tbsp oil in frypan
- stir beaten egg into veg mix
- add seasonings to taste
- add flour to bind
- with floured hands, make 2inch balls and place two or three at a time into heated oil, flattening to about 3/4".
- fry on medium/high
- turn over when dark golden and cooked through.
- repeat for additional mixture.
