Orange and Almond Cake

This makes a fantastically moist and flavoursome cake.

a 24cm cake
- 2 oranges
- 6 eggs
- 200g granulated sugar
- 200g ground almonds
- 2tbsp plain flour
- 1tsp baking powder
Method/steps
- Scrub the oranges thoroughly and place in a pan of cold water.
- Bring to the boil and simmer for one hour.
- Drain and allow to cool.
- Cut the oranges in half and remove the pips.
- Whizz them in a liquidiser until pulpy.
- Heat oven to 180C/Gas Mark 4.
- Beat the eggs and sugar together until pale.
- Add orange pulp and almonds and stir well.
- Sift in flour and baking powder and stir again.
- Pour batter into a buttered and floured 24cm springform tin.
- Bake for about an hour, until the top is firm to the touch.
- Allow to cool, turn out and dust with icing sugar.
