  • 1/4 cup brown sugar
  • 1/2 cup paprika
  • 1/4 cup chilli powder
  • 2tbsps cayenne pepper
  • 1/4 cup salt
  • 1/4 cup cracked black pepper
  • 1 chicken
Method/steps
  1. Mix all the dry ingredients thoroughly.
  2. Rub all over chicken, inside and out.
  3. Allow to stand for at least two hours and up to twenty-four.
  4. Light barbecue.
  5. When the coals are ready rake them to the sides of the fire bed.
  6. Put a drip tray in the middle of the fire bed.
  7. Insert a half-full stubby can of beer into the chicken's bottom.
  8. Use the beer can and the chicken's legs to stand it upright on the barbecue.
  9. Put the lid over it and cook for an hour or so.
Additional Tips
I acquired this recipe from an American, so measurements are in American cups.
Good with the barbecue sauce recipe which I'm about to add, saute potatoes and a salad or two.
