Description An easy recipe to use up your courgettes.

  • 650g of courgettes and tomatoes diced
  • 20cl of crème fraiche
  • 35g cornflour
  • 4 eggs
  • 1 finely chopped onion
  • 1 bouquet of parsley
  • 70g gruyère grated
  • salt and pepper to taste
Method/steps
  1. Mix all together
  2. spoon out into a bun / muffin tin
  3. cook for 40 minutes at 180 C
Additional Tips
Any veg could be used, but this combination is very successful and it can be frozen.
