'Dormice'

Description A simple party snack based on small eggs, ideal for children to help prepare

  • Small eggs, hardboiled
  • Chives
  • Flaked almonds or Pine Kernals
  • Cloves
  • Spices to taste
  • Salad garnish, berries optional
Method/steps
  1. Hardboil, cool and shell the eggs
  2. Cut a small slice off each one so it doesnt roll around the plate (large eggs could be halved)
  3. From here on the aim is to get the eggs to look like little mice:
  4. Make a small hole with a skewer and insert a chive 'tail'
  5. Add two pine kernals or flakes of almond for ears
  6. Add a clove for a nose
  7. Arrange on a nest of salad, a few optional berries and nuts look pretty
  8. Lightly dust with spices, try pepper and paprika for a subtle spicy taste, or just a littel pepper and salt, or powdered mustard perhaps, you only need a tiny bit.
Additional Tips
Children like helping with this recipe, it owes its inspiration to the Roman practice of eating Dormice as a delicacy, but its a great use for a lot of home produced small eggs
