Beer Damper

Description This is a great tasty kind of bread. It doesn't need yeast so it is really easy to make.

1 loaf
  • 375ml self raising flour
  • 375ml wholemeal flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 40g grated parmesan cheese
  • 375ml beer
  • 1 egg yolk (for basting)
  • Sea salt and mixed herbs to taste
Method/steps
  1. Sift flours with salt and sugar into a bowl.
  2. Add grated parmesan and beer and mix well.
  3. Bake the mixture in a loaf tin (or simply on a baking tray) for 55 minutes in a moderate oven, basting once and sprinkling with sea salt and herbs.
Additional Tips
Variations include chopped sundried tomatoes, olives and herbs... add to the damper mix, either separately or in combinations.

I make this with pale ale, but you can use any kind of beer you like!
