CURRIED LENTIL BURGERS

Description These burgers are delicious! They are easy to make, and you can freeze the ones you don't need immediately, so you can have a very quick-to-prepare meal another time!

  • Olive oil
  • 230g carrots, grated
  • 250g parsnips, grated
  • 1 large onion, grated
  • 5cm piece fresh ginger, peeled and grated
  • 3 garlic loves, chopped
  • 3 tsp mild curry powder
  • 500ml vegetable stock
  • 220g red lentils
  • 1tbs sultanas
  • 100g fresh white breadcrumbs
  • Plain flour for dusting
Method/steps
  1. Heat some oil in a large auscepan over medium heat. Add the carrots, parsnips, onion, ginger, garlic and gurry powder, cook uncovered for 5 minutes until the vegetables are soft.
  2. Add the stock, lentils, sultanas, bring to the boil, then reduce heat and simmer covered, stirring occasionally, for 20 minutes until the stock has been absorbed by the lentils.
  3. Remove from heat and transfer to a large bowl. Allow to cool for 10 minutes.
  4. Add the breadcrumbs and mix in well. Use lightly floured hands to shape mixture into about 12 individual burgers.
  5. Brush a large non-stick frying pan with oil and fry the burgers in batches at medium-low heat until golden-brown on both sides.
Additional Tips
SERVING SUGGESTION
Put a burger in a round sesame seed bun with a slice of cheese, fresh rocket, tomato, cucumber, mayonnaise and kecap manis. Serve with potato wedges.

HINT
When freezing, put a layer of cling film or grease-proof paper between burgers so they can be easily separated later.
