  • 1lb granulated sugar
  • 2oz butter
  • 1/8 pint single cream or evaporated milk
  • 1/8 pint fresh milk
  • 2oz golden syrup
Method/steps
  1. Put all ingredients into a big heavy pan.
  2. Stir over gentlr heat until sugar is dissolved.
  3. Turn up heat and bring to the boil, stirring all the time till 240C or when a drop tested in cold water forms a soft ball.
  4. Cool for a little while and then beat with wooden spoon until creamy.
  5. Pour into baking tin and cut up when cold.
Additional Tips
If you havn't got a sugar thermometer(I havn't), boil until the mixture goes a bit of a darker colour and starts to come away from the edges of the pan more when you are stirring.
I make mine in a pressure cooker - without the lid on! as it is nice and big as the mixture does rise up when boiling.
