Onion Tarte Tatin

  • 4-6 onions
  • puff pastry
  • knob of butter
  • 2 tsp sugar
  • goats cheese
Method/steps
  1. Slice the onion and place in frying pan to caramelise with a knob of butter and a couple of teaspoons of sugar
  2. Meanwhile roll ut the puff pastry to the size of your frying pan
  3. Place the puff pastry on top of the pan once the onions are golden in colour
  4. Pop the pan into the oven for 10-15 mins at 200c until the pastry is puffed, cooked and golden
  5. Tip out the tarte tatin onion side up onto a tray - crumble some goats cheese on top and place under the grill until the cheese has melted a bit and gone golden brown
Additional Tips
Lovely served with salad
You can use a mixture of onions - red, white and spring
