Chicken With Chorizo And Paprika

Description A nice chicken dish full of spanish flavours, good on its own or as part of a tapas selection

  • 3 chicken thighs skinned and boned
  • 1 large chorizo
  • 2-4tsp paprika
  • 2 cloves of garlic
  • 2 bay leaves
  • good handful of fresh oregano
  • olive oil
  • 1 red onion
  • 1 pepper
Method/steps
  1. Chop up the chicken and chorizo into bite sized chunks
  2. Finely chop the garlic
  3. Roughly chop the oregano and bay
  4. Put chopped ingredients into a bowl along with the paprika (adjust to taste) and a good slug of olive oil
  5. Mix up and leave for at least 1/2hr to marinade
  6. Roughly chop the onion and pepper and start to soften in a frying pan
  7. Add the other ingredients along with the marniade and cook untill the chicken is cooked through
Additional Tips
Serve with rice or cracked wheat or in a collection of tapas
