- 2 round lettuces (approx 14oz in total)
- a thick wodge of butter
- 2 shallots
- 1lb 2oz fresh or frozen peas
- 1 and 3 quarter pints of stock, either chicken or veg
- 3 sprigs fresh mint
- s&p
Method/steps
- Wash the lettuce thoroughly
- Peel and slice shallots and sofetn in the butter
- Chop lettuce up a bit and add to the shallots
- As soon as the lettuce has wilted, add the peas the stock and the mint leaves and bring to the boil
- Turn down the heat, season and simmer for 10 mins
- Blend the soup until smooth and serve
