Lettuce, pea and mint soup

  • 2 round lettuces (approx 14oz in total)
  • a thick wodge of butter
  • 2 shallots
  • 1lb 2oz fresh or frozen peas
  • 1 and 3 quarter pints of stock, either chicken or veg
  • 3 sprigs fresh mint
  • s&p
Method/steps
  1. Wash the lettuce thoroughly
  2. Peel and slice shallots and sofetn in the butter
  3. Chop lettuce up a bit and add to the shallots
  4. As soon as the lettuce has wilted, add the peas the stock and the mint leaves and bring to the boil
  5. Turn down the heat, season and simmer for 10 mins
  6. Blend the soup until smooth and serve
Additional Tips
Can be frozen
