Cab's Jam Roly Poly

  • 500g self raising flour
  • 250g suet
  • a good pinch of salt
  • around 300ml cold water
  • Best part of a jar of home-made raspberry jam
Method/steps
  1. Mix the salt, flour and suet and slowly work in the water to form a workable dough
  2. Knead a little and roll it out to 1.5cm thick, or to a size that will be rolled into a cylinder to fit in a teatowel
  3. Get a nice clean teatowel that has been washed many times so it is dye fast and wet it
  4. Smear jam on the dough, enough to give a thick covering, leaving say 2cm around the outside
  5. Fold the outside edge to keep the jam in place and roll up the dough
  6. Wet the end and edges to seal it and fold in the jam as best as you can
  7. Roll it in the teatowel, make a cracker by tying the ends with string and simmer it gently, almost covered in water for 3 hours
Additional Tips
Serve with custard or good vanilla ice cream
Raspberry jam is traditional but other jams can be used
