Serves
2-3
- 4-6 mutton chops
- 1/2 cup of olive oil
- 2 handfulls of dried apricots
- 2 medium chopped onions
- 2 sliced cloves of garlic
- 1 teaspoon sumaq
- 1/2 teaspoon of ground ginger
- 1/2 teaspoon of ground cumin
- 3 dessertspoons of honey
- salt and pepper
Method/steps
- Put the spices in a pan with the oil, onions, garlic and mutton. Cook gently until the lamb is browned slightly, and turn the head down.
- Add sufficient water to cover, bring to a low simmer, cover, and cook for 40 minutes.
- The chops should now be cooked and tender; remove them from the sauce.
- Add the honey and apricots, and cook the sauce down until it is thick and sweet, almost (but not quite) caramelised.
- Serve on a bed of cous cous, the hot sauce and apricots poured over the chops.
