Sweet Moroccan Mutton

Description A sweet, spicy recipe combining mutton and apricots.

  • 4-6 mutton chops
  • 1/2 cup of olive oil
  • 2 handfulls of dried apricots
  • 2 medium chopped onions
  • 2 sliced cloves of garlic
  • 1 teaspoon sumaq
  • 1/2 teaspoon of ground ginger
  • 1/2 teaspoon of ground cumin
  • 3 dessertspoons of honey
  • salt and pepper
Method/steps
  1. Put the spices in a pan with the oil, onions, garlic and mutton. Cook gently until the lamb is browned slightly, and turn the head down.
  2. Add sufficient water to cover, bring to a low simmer, cover, and cook for 40 minutes.
  3. The chops should now be cooked and tender; remove them from the sauce.
  4. Add the honey and apricots, and cook the sauce down until it is thick and sweet, almost (but not quite) caramelised.
  5. Serve on a bed of cous cous, the hot sauce and apricots poured over the chops.
