- 1.75kg quinces
- 3 lemons, rind and juice
- 3.5l water
- Sugar
Method/steps
- Wash quinces and chop.
- Simmer covered with 2.25l water, lemon rind and juice until tender. About an hour.
- Strain through jelly bag.
- Return pulp to pan and add remaining water.
- Bring to the boil, simmer for 30 minutes, then strain.
- Mix extracts together and measure. Add 450g sugar/500ml juice.
- Return to boil and boil vigorously until setting point is reached.
