Brie and Saffron Tart

Description A rich, aromatic medieval recipe that is a great way to use local eggs

  • enough pastry to line a flan tin
  • a wedge of brie
  • large pinch saffron
  • a small onion
  • 3-4 eggs
  • cream
  • black pepper
Method/steps
  1. Roll out pastry and line the tin of your choice. Prick the base well with a fork,
  2. Finely slice the onion and scatter into the base of the pastry case
  3. Chop the brie into chunks and distribute evenly into the case.
  4. Mix eggs, saffron, pepper and cream, and pour over teh cheese and onions.
  5. Bake in a mederate oven until set.
Additional Tips
This is very rich and will serve a lot of people. Its a mix betweeen sweet and savoury and goes well with salad at buffet style meals.Exact quantities are adjustable to fit your available ingredients.
