Crab sauce for pasta

Description Crab is still fairly cheap and goes a long way.

  • All the meat from a crab including the brown meat.
  • A mildish chilli
  • 3 cloves of garlic
  • Small glass of white wine
  • A bunch of coriander
  • S&P
Method/steps
  1. Finely chop the chilli and garlic.
  2. Sweat in olive oil until softened.
  3. Add the crab meat and wine.
  4. Simmer for a bit until you're happy with the consistency.
  5. Add the chopped coriander.
  6. Check seasoning.
Additional Tips
Serve with tagliatelle
