A fair bit
- 1kg onions, finely sliced
- olive oil
- 125g caster sugar
- 300ml white wine vinegar
- 4 cloves
- 2 bayleaves
- 1 tsp ground black pepper
- 1 tsp salt
- 2 tbsps tomato puree
- cayenne pepper to taste
Method/steps
- Sweat the onions in the olive oil until soft and translucent.
- Add all the other ingredients, cover and cook gently for about an hour.
- Uncover, check seasoning.
- Continue to cook, uncovered, until marmaladey in consistency.
- Store in jars.
