- 450g gooseberries
- 15g butter
- 1.5 tbs sugar
- Grated zest and juice of half an orange
- s&p
Method/steps
- Top and tail the gooseberries.
- Put berries, butter, sugar and orange juice into a non-reactive pan.
- Cover and stew over a low heat until the juices begin to run.
- Remove the lid and raise the heat slightly.
- Add the orange zest.
- Simmer until about the consistency of tomato ketchup.
- Season with s&p.
- Sieve or not according to taste.
