Gooseberry Sauce

Description Excellent with mackerel or pork.

  • 450g gooseberries
  • 15g butter
  • 1.5 tbs sugar
  • Grated zest and juice of half an orange
  • s&p
Method/steps
  1. Top and tail the gooseberries.
  2. Put berries, butter, sugar and orange juice into a non-reactive pan.
  3. Cover and stew over a low heat until the juices begin to run.
  4. Remove the lid and raise the heat slightly.
  5. Add the orange zest.
  6. Simmer until about the consistency of tomato ketchup.
  7. Season with s&p.
  8. Sieve or not according to taste.
Additional Tips
You can add star anise or crushed coriander seeds while it's cooking if you like, but I prefer to make it plain then add flavours to batches as I use them.
