Rice with nuts and garlic

  • 40g chopped nuts
  • 4 cloves garlic, minced
  • 3 tbs chopped parsley
  • 75g grated hard cheese
  • 5 tbs olive oil
  • Salt
  • Pepper
  • 900 ml stock
  • Juice of half a lemon
  • 325g long grain rice
Method/steps
  1. Pulverise the nuts, garlic and parsley.
  2. Stir in the cheese.
  3. Add the oil in a thin stream, while beating.
  4. Season with s&p
  5. Cook the rice in stock and lemon juice.
  6. Drain well and put into a warmed bowl.
  7. Mix in the sauce.
