Digestive Biscuits

Description What the name suggests - slightly different from bought ones, but suitable to eat on their own, or with cheese/pate

  • 6 oz plain wholemeal/wheat/brown flour (the strong stuff for breadmaking is OK too)
  • 2oz oatmeal (fine or medium, but not coarse or pinhead)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 3oz margarine - you can use the hard block stuff for a crisper biscuit, but the usual spready marge also works
  • 1oz soft brown sugar (dark or light)
  • 3-4 tablespoons of milk
Method/steps
  1. Pre-heat normal oven to 190C / 375F / Gas 5. Fan oven 170C
  2. Mix flour, oatmeal, salt and baking powder together in a bowl
  3. Rub in the margarine till mix is like breadcrumbs
  4. Stir in the sugar
  5. Add the milk bit by bit, and mix to a firm dough
  6. Turn onto floured surface and roll out thinly
  7. Cut out using 3" cutter or similar
  8. Place on heavy greased baking tray
  9. Prick all over with a fork
  10. Bake in oven for 12 - 15 mins till just browning (10-12 mins fan oven)
  11. Remove from baking tray with a fish slice and leave to cool on wire rack
Additional Tips
The biscuits rise a wee bit, but not much, so roll dough out to the thickness you want the biscuits.
