  • For crust:
  • 1 cup all-purpose flour (100g.)
  • 1/2 cup butter (115 g.)
  • 1 1/2 T. apple cider vinegar
  • Filling:
  • 4 cups blueberries (washed and picked over) (600g.)
  • 3/4 cup granulated sugar (145g.)
  • 3 T. cornstarch or granulated tapioca
Method/steps
  1. For crust:
  2. Beat crust ingredients together until the mixture clings to the beaters.
  3. Use a rubber spatula to press into 9 inch (23-24c.) pie plate.
  4. For filling:
  5. whisk the sugar and cornstarch together.
  6. Toss the blueberries gently in the mixture.
  7. Pour into the unbaked crust. (There will be "extra" sugar and cornstarch, just sprinkle it evenly over the berries.)
  8. Bake in 350 degree (175 C) oven for 50-55 minutes. The juice needs to bubble, or the pie won't set up.
