  • 6oz golden syrup
  • 3 and a half oz black treacle
  • 3oz light muscavado sugar
  • 6oz unsalted butter
  • 7oz oatmeal
  • 8oz plain flour
  • 1 tsp ground ginger
  • 2 tsp bicarbonate of soda
  • 1 egg beaten with 3 tbsp milk
Method/steps
  1. Preheat oven to 170c and line a 23cm / 9in square tin with greaseproof or parchment paper
  2. Put the syrup, treacle, sugar and butter in a saucepan and dissolve together
  3. Mix together the oatmeal, flour, ginger and bicarbonate of soda and stir into the syrup followed by the egg
  4. Pour into the prepared tin and bake for 1 hour, or until an inserted skewer comes out clean
  5. Transfer to a cooling rack, remove the paper and allow to cool. Cut into 12 pieces
