Blackcurrent cordial

Description Tastes so much nicer than commercial cordials.

2 and a bit litres.
  • 6lb blackcurrants
  • 4 Bramley apples (peeled, cored and chopped)
  • 26 oz sugar
  • Some water
  • (All amounts are approximate)
Method/steps
  1. Put all the fruit into a big pan.
  2. Add water to not quite cover.
  3. Bring to the boil until all is soft and mushy.
  4. Strain through a jelly bag (a pillow case would do fine.
  5. Leave to drip, preferably overnight.
  6. Measure the resulting juice.
  7. Return to the pan.
  8. Add 8oz sugar for every pint.
  9. Heat gently until all the sugar is dissolved.
  10. Pour into containers.
Additional Tips
I use 1 litre plastic milk containers that have been thoroughly cleaned by running though a hot cycle on the dish washer. Then I freeze until needed.
