- 1 large chopped onion
- 1 small leek
- 1 large diced carrot
- 1 medium diced potato
- 2 crushed garlic cloves
- 50g butter
- 4 rashers of back bacon/half a packet of lardons
- 200g red lentils
- Chicken or vegetable stock
- 1 large bay leaf
- 1/2 teaspoon of cumin
- Salt and pepper
Method/steps
- Heat pan, add butter until melted.
- Add the bacon and carrot, then the onion, leek and finally the potato and garlic. Keep frying until the root vegetables are softened.
- Add the lentils and stir until they are coated with butter/bacon fat.
- Add the stock, cumin, bay leaf, salt and pepper and stir well.
- Simmer for around 20 minutes, or until the lentils have cooked through properly.
