  • 4 tbsp golden caster sugar or honey
  • 8 tbsp water
  • 1 vanilla pod split lengthways
  • 4 ripe quinces, washed, left whole and NOT peeled
  • 2 small bay leaves
Method/steps
  1. Preheat the oven to 180c/gas mark 4
  2. Melt together the sugar or honey and water and add the vanilla pod.
  3. Bring to a simmer and add the quinces and bay leaves.
  4. Put the lid on and bake for 45minutes to an hour.
  5. Eat warm.
Additional Tips
Good with properly made vanilla custard.
