- 4 tbsp golden caster sugar or honey
- 8 tbsp water
- 1 vanilla pod split lengthways
- 4 ripe quinces, washed, left whole and NOT peeled
- 2 small bay leaves
Method/steps
- Preheat the oven to 180c/gas mark 4
- Melt together the sugar or honey and water and add the vanilla pod.
- Bring to a simmer and add the quinces and bay leaves.
- Put the lid on and bake for 45minutes to an hour.
- Eat warm.
