Basmati Rice Wine

Description
This is a recipe contributed by Blacksmith, taken from C J J Berry's book.
Ingredients
- Raisins 3 lb
- Rice 5 lb
- Sugar 10 lb
- Citric acid 2 tablespoons
- Yeast and nutrient 2 ozs
- Water 3 gallons
Method/steps
- Dissolve sugar in some of the water, allow to cool, pour over rice and raisins.
- Add acid and rest of water & yeast.
- Stir daily for 21 days, sieve into demi johns.
- Ferment out. Ready for drinking STRAIGHT AWAY
- If not drunk within 2 months add one campden tablet per gallon and leave for 9 months.
- Pulp can be used to make a lighter wine.
