Basmati Rice Wine

Description This is a recipe contributed by Blacksmith, taken from C J J Berry's book.
Ingredients
At a glance
Type
  • Raisins 3 lb
  • Rice 5 lb
  • Sugar 10 lb
  • Citric acid 2 tablespoons
  • Yeast and nutrient 2 ozs
  • Water 3 gallons
Method/steps
  1. Dissolve sugar in some of the water, allow to cool, pour over rice and raisins.
  2. Add acid and rest of water & yeast.
  3. Stir daily for 21 days, sieve into demi johns.
  4. Ferment out. Ready for drinking STRAIGHT AWAY
  5. If not drunk within 2 months add one campden tablet per gallon and leave for 9 months.
  6. Pulp can be used to make a lighter wine.
