Beetroot and coconut cake

  • 5oz wholewheat flour
  • 0.5 tbsp baking powder
  • 0.5 tsp ground ginger
  • 0.25 tsp EACH ground coriander, ground allspice, ground cinnamon
  • 3 fl oz olive oil
  • 1.5 oz melted butter
  • 5oz light brown sugar
  • 2 eggs
  • 6 oz grated raw beetroot
  • 1.5 oz dessicated coconut
Method/steps
  1. Mix oil, butter and sugar.
  2. Add eggs 1 at a time, each with a little of the flour. Beat well after each addition. Stir in beetroot and coconut. Fold in dry ingredients.
  3. Line loaf tin, bake at 160 for about 40 mins, until knife comes out clean.
  4. Cool on wire rack.
Additional Tips
Decorate with cream cheese.....or serve with hot raspberry sauce and plain yogurt. Or just eat with a cuppa!
