- 5oz wholewheat flour
- 0.5 tbsp baking powder
- 0.5 tsp ground ginger
- 0.25 tsp EACH ground coriander, ground allspice, ground cinnamon
- 3 fl oz olive oil
- 1.5 oz melted butter
- 5oz light brown sugar
- 2 eggs
- 6 oz grated raw beetroot
- 1.5 oz dessicated coconut
Method/steps
- Mix oil, butter and sugar.
- Add eggs 1 at a time, each with a little of the flour. Beat well after each addition. Stir in beetroot and coconut. Fold in dry ingredients.
- Line loaf tin, bake at 160 for about 40 mins, until knife comes out clean.
- Cool on wire rack.
