- 1.5 - 2lb Pork belly, cut into strips
- 4 fresh red chillis
- 2 tbl spoons clear honey, warmed
- 2oz 70% cocoa chocolate, melted
Method/steps
- Pre heat oven to 200°C
- Season the pork with salt and pepper
- Lay on a rack in roasting tin and roast for 30-35 mins until golden brown
- In a liquidizer, blend the chillis and honey. Add the melted chocolate and process again until mixed.
- Remove pork from oven and drain.
- Brush meat generously with the glaze and return to oven for 10 mins.
- Serve on a bed of fresh veggies, stir fried with ginger.
