- 6oz sugar
- 1.5oz plain flour
- 1oz butter
- Grated rind and juice of 1 large lemon
- 2 eggs separated
- 6 fluid oz or 9 brimming tbsp milk
Method/steps
- Mix together sugar, flour, butter shredded into tiny pieces, lemon rind and juice and egg yolks. Beat well.
- Add milk gradually, beating well.
- Fold in firmly-whisked eggg whites.
- Butter a 2 pint souffle dish and pour in the mixture.
- Pour 2 inches of water into a small roasting tin, and stand the pudding mixture in it.
- Bake at Gas 4, 180C. 40 minutes or there abouts, until golden and firm on top.
- Allow to stand for 5 to 10 minutes before serving.
