Lemon Dainty

Description This has a spongy top, with a lemony saucy bit underneath.

  • 6oz sugar
  • 1.5oz plain flour
  • 1oz butter
  • Grated rind and juice of 1 large lemon
  • 2 eggs separated
  • 6 fluid oz or 9 brimming tbsp milk
Method/steps
  1. Mix together sugar, flour, butter shredded into tiny pieces, lemon rind and juice and egg yolks. Beat well.
  2. Add milk gradually, beating well.
  3. Fold in firmly-whisked eggg whites.
  4. Butter a 2 pint souffle dish and pour in the mixture.
  5. Pour 2 inches of water into a small roasting tin, and stand the pudding mixture in it.
  6. Bake at Gas 4, 180C. 40 minutes or there abouts, until golden and firm on top.
  7. Allow to stand for 5 to 10 minutes before serving.
Additional Tips
Letting it stand for a bit before serving is essential in my opinion.
