Savoury Bread and Butter Pudding

Description Mochyn's delicious recipe for using up leftover bread.

  • about half a loaf of sun dried tomato & oregano bread, thickish slices
  • a pot of creme fraiche 450 ml
  • 2 eggs (in this case 1 med. hen's and 1 duck)
  • 1 thinly sliced & fried onion
  • olive oil
  • seasoning
Method/steps
  1. Fry the bread in the olive oil, not soaking it but just enough oil to stop it sticking, to brown it a little.
  2. Layer in a pan or oven-proof dish.
  3. Mix the eggs and creme fraiche together with seasoning and pour over the bread.
  4. Bake, uncovered, at about 400°F for approximately 20 mins or until it's as brown as you like it.
Additional Tips
Mochyn added that it was really yummy with pork belly. You can use any type of bread you like and probably put other veg in: mushrooms & peppers would be nice. You could also add chopped bacon or some such and make it a one-pot meal.
