  • 2 cups morels
  • 1 cup bread crumbs
  • 2 hard-boiled egg yolks
  • 2 raw egg yolks
  • 1 cup milk or cream
  • 4 Tblsps butter
  • Salt
  • Pepper
Method/steps
  1. Chop morels.
  2. Mix the mashed hard-boiled yolks with the raw ones in a mixing bowl and stir in milk.
  3. On the bottom of a baking dish put a layer of bread crumbs, then a layer of mushrooms.
  4. Scatter bits of butter on.
  5. Pour on egg mixture, saving enough for a top layer of crumbs and butter.
  6. Add that top layer.
  7. Bake for 20 minutes, closely covered in a hot oven.
  8. Uncover and cook for 5 more minutes until top is well browned.
