Marrow and Apricot Jam

  • 2LB marrow peeled seeded and cut into squares peeled weight
  • 8OZ dried apricots, soaked overnight and drained grated rind and juice of 2 lemons
  • 3LB sugar
Method/steps
  1. Steam marrow for about 15 mins then mash
  2. Put apricots in pan with 1.5 pints water and cook about 30 mins til soft.
  3. Add marrow pulp to apricots with lemon rind lemon juice and sugar.
  4. Heat gently until sugar dissolves stirring to prevent sticking.
  5. Bring to boil and boil rapidly for 15-20 mins until setting point reached. Remove scum and pot up
