about 5 lb
- 2LB marrow peeled seeded and cut into squares peeled weight
- 8OZ dried apricots, soaked overnight and drained grated rind and juice of 2 lemons
- 3LB sugar
Method/steps
- Steam marrow for about 15 mins then mash
- Put apricots in pan with 1.5 pints water and cook about 30 mins til soft.
- Add marrow pulp to apricots with lemon rind lemon juice and sugar.
- Heat gently until sugar dissolves stirring to prevent sticking.
- Bring to boil and boil rapidly for 15-20 mins until setting point reached. Remove scum and pot up
