A delicious recipe for the spring when the ransoms are growing.

- Handful wild garlic leaves, washed and coarsely shredded.
- 2 or 3 duck eggs (depending on greed/size of your pan) beaten with S&P and a small splash of water.
- Lump of butter.
Method/steps
- Heat frying pan.
- Chuck in butter, when foaming add ransoms and sweat for a minute.
- Pour in eggs and make into an omelette.
