Wild garlic and duck egg omelette

Description A delicious recipe for the spring when the ransoms are growing.

  • Handful wild garlic leaves, washed and coarsely shredded.
  • 2 or 3 duck eggs (depending on greed/size of your pan) beaten with S&P and a small splash of water.
  • Lump of butter.
Method/steps
  1. Heat frying pan.
  2. Chuck in butter, when foaming add ransoms and sweat for a minute.
  3. Pour in eggs and make into an omelette.
