A good recipe for muffins - the orange rind really makes a difference.

- 275g blueberries
- 225g plain flour
- 2.5tsp baking powder
- 0.5tsp salt
- 0.25tsp ground nutmeg
- 175g caster sugar
- 2 eggs
- 175ml milk
- 115g butter, melted
- grated rind of one orange
- 1tsp vanilla essence
- 50g granulated sugar
- 0.25tsp ground nutmeg
Method/steps
- Preheat oven to 190°C.
- Line two muffin tins with paper cases (or grease well).
- Mash half of the blueberries. Sieve flour, baking powder, salt and nutmeg into mixer bowl. Stir in caster sugar and make a well in the centre.
- Beat in eggs, milk, melted butter, orange rind, vanilla essence and mashed blueberries. Don't over mix.
- Gently mix in remaining blueberries, and spoon into prepared tins/cases.
- Mix granulated sugar and ground nutmeg together and sprinkle over the top.
- Bake for 25-30 minutes.
- Remove from oven and allow to cool in the tin for 5 minutes before transferring to a wire rack.
