Blueberry Muffins

Description A good recipe for muffins - the orange rind really makes a difference.

  • 275g blueberries
  • 225g plain flour
  • 2.5tsp baking powder
  • 0.5tsp salt
  • 0.25tsp ground nutmeg
  • 175g caster sugar
  • 2 eggs
  • 175ml milk
  • 115g butter, melted
  • grated rind of one orange
  • 1tsp vanilla essence
  • 50g granulated sugar
  • 0.25tsp ground nutmeg
Method/steps
  1. Preheat oven to 190°C.
  2. Line two muffin tins with paper cases (or grease well).
  3. Mash half of the blueberries. Sieve flour, baking powder, salt and nutmeg into mixer bowl. Stir in caster sugar and make a well in the centre.
  4. Beat in eggs, milk, melted butter, orange rind, vanilla essence and mashed blueberries. Don't over mix.
  5. Gently mix in remaining blueberries, and spoon into prepared tins/cases.
  6. Mix granulated sugar and ground nutmeg together and sprinkle over the top.
  7. Bake for 25-30 minutes.
  8. Remove from oven and allow to cool in the tin for 5 minutes before transferring to a wire rack.
