Chocolate and Lemon Pinwheel Biscuits

Description Another of Bagpuss's delicious biscuit recipes. This produces very nice biscuits akin to shortbread which are also very pretty with the spiral effect.

  • 175g butter
  • 300g caster sugar
  • 1 egg
  • 350g plain flour
  • 25g cooled melted chocolate
  • zest of 1 lemon
Method/steps
  1. Beat together the butter and sugar until pale and fluffy.
  2. Beat in the egg.
  3. Add the flour and mix until a soft dough is formed
  4. At this stage divide the mixture in half.
  5. To the first half add the melted chocolate and to the other half add the lemon zest.
  6. Take each piece of dough and roll them out to rough squares of equal size.
  7. Place one square on top of the other and roll up.
  8. Cut in half and wrap.
  9. Put the pieces in the fridge for at least 30 minutes
  10. Take the dough out and slice pieces off the sausages.
  11. Bake for 10-12 minutes at 190c.
  12. Leave then a couple of minutes on the tray to cool then transfer to a cooling rack.
Additional Tips
The dough can be in the fridge for a few days and would probably freeze too
