Chocolate and Lemon Pinwheel Biscuits

Description
Another of Bagpuss's delicious biscuit recipes.
This produces very nice biscuits akin to shortbread which are also very pretty with the spiral effect.

- 175g butter
- 300g caster sugar
- 1 egg
- 350g plain flour
- 25g cooled melted chocolate
- zest of 1 lemon
Method/steps
- Beat together the butter and sugar until pale and fluffy.
- Beat in the egg.
- Add the flour and mix until a soft dough is formed
- At this stage divide the mixture in half.
- To the first half add the melted chocolate and to the other half add the lemon zest.
- Take each piece of dough and roll them out to rough squares of equal size.
- Place one square on top of the other and roll up.
- Cut in half and wrap.
- Put the pieces in the fridge for at least 30 minutes
- Take the dough out and slice pieces off the sausages.
- Bake for 10-12 minutes at 190c.
- Leave then a couple of minutes on the tray to cool then transfer to a cooling rack.
