Makes
8 -10 biscuits
  • 175g plain flour
  • 1tsp baking powder
  • 125g butter/margarine
  • 90g light muscovado sugar
  • 75g caster sugar
  • 1/2tsp vanilla essence
  • 1 egg
  • 125g chocolate chips (I sometimes use more chopped up chocolate)
Method/steps
  1. Place everything but chocolate chips in a bowl and beat well
  2. Add chocolate chips and mix
  3. Place dessert spoons full of mixture on to prepared baking tray
  4. Cook at 190c for 10-12 minutes till golden brown.
  5. Remember to leave on baking tray for 5 minutes afterwards to firm up a bit.
Additional Tips
Don't use too much dough in each cookie otherwise they spread and become quite taxing to get off the tray. They do have a tendency to leave their base behind when removed especially if you don't use baking parchment or silicon. You can add nuts as well as chocolate chips or melted chocolate to make it double choc. This recipe I generally double as it only makes about 8 - 10 on its own and they go quickly.
