Beef Curry Indonesianish

Description A faintly Indonesian style beef curry, a great alternative to a stew for using up stewing steak.

  • 4kg stewing steak
  • 7 red peppers
  • 2 chillis (really hot Fatali ones from the freezer)
  • Fair lump of ginger, grated
  • 4 med onions
  • 1 bulb garlic
  • 2 dessert spoons of brown sugar
  • Half a tub of Blue Dragon tamarind paste
  • Good dollops of:
  • Lemongrass (from a jar)
  • Soy Sauce (plenty of this)
Method/steps
  1. I put all the ingredients except 2 peppers and the meat into a food processor, whizzed up to a slurry.
  2. Heated up some oil in my biggest based pan added some of the paste, let it dry out a little and then add the meat, keep on cooking till the meat is nice and brown and there's hardly any moisture left. It took me about 5 or 6 batches in a 32cm pan to do this, you really need to cook hot.
  3. Once all the meat is browned put it into a pan and cover with water, bring to a boil and then simmer gently for as long as it takes to tenderise the meat, took me about 3 hrs, of course the meat will carry on cooking after the heat is switched off (that's why my chicken disintegrated completely Rolling Eyes ) so it doesn't need to be falling apart.
  4. I got to this stage on Sunday night, before serving on Monday I finely sliced the remaining peppers and added before reheating, just before serving I added a really good handful of Thai basil.
