- 2 egg yolks
- 1tbsp Dijon mustard
- Salt and pepper
- 300ml sunflower oil (or other neutral oil)
- 100ml light olive oil
- juice of 1/2 lemon
- 1-2tbsp warm water
Method/steps
- Make sure that all ingredients are at room temperature.
- Put egg yolks, mustard and s&p in a mixing bowl.
- Beat with a balloon whisk until thick.
- Gradually add the oils, beating continuously.
- Add a bit of lemon juice (still beating).
- Keep going until you\'ve used all the oil and lemon juice and the mayonnaise is thick and glossy.
- If the sauce is too thick you can let it down by whisking in some warm water.
