Hot cross buns

Description Hot cross buns - from a Waitrose recipe card, adapted for the breadmaker.

  • 175ml milk
  • 3 tsp dried yeast
  • 350g white bread flour
  • 1 tsp salt
  • 50g butter
  • 50 brown sugar (any kind - or white if you're pushed)
  • 1 tsp ground cinnamon
  • 2 tsp misxed spice
  • 1/2 tsp grated nutmeg
  • 100g currants/rasins/mixed fruit - whatever
Method/steps
  1. Bung it all in the breadmaker except the fruit
  2. Put the fruit in the rasin dispenser and set to rasin dough if your machine does it. If not, knead in the rasins when the dough is ready.
  3. Then shape into 8 little buns, and leave for about an hour to rise somewhere warmish.
  4. Bake at 200 deg C for about 20 mins.
  5. You can make a flour paste to make X's before they go in the oven, and glaze with a little sugar and water boiled to make a syrup when they come out, but I almost never bother.
  6. Split and toast, and eat with lots of butter, and a pot of tea at four o'clock, preferably by the fire on a winters afternoon, surrounded by a good book and a couple of sleeping dogs.
Additional Tips
Sleeping dogs optional, and knitting may be substituted for the book, if prefered. Tea is essential.

They do freeze well if you split them first, and will defrost in the toaster, so are ideal for quick snacks.
