Chestnut, Cranberry and Camembert Roast

Description A tasty vegetarian nut roast, especially good for winter

  • 1 leek, sliced
  • 1 pepper, chopped
  • 1 clove garlic, chopped
  • olive oil
  • half glass red wine
  • 1 tbsp chopped parsley
  • 2 tbsp mixed seeds (eg sunflower, pumpkin, pinenut)
  • 12 peeled cooked chestnuts, chopped (I boil them)
  • 2 tbsp peanuts, chopped (could use almonds)
  • 2 tbsp fresh cranberries
  • 3oz camembert (or other soft cheese)
  • 2 thick slices wholemeal bread, crumbled
  • 1 lg egg
Method/steps
  1. saute leeks,pepper and garlic in oil
  2. add red wine and simmer 10 mins
  3. add rest of ingredients except cheese and egg, mix
  4. remove from heat, then stir in beaten egg
  5. assemble in greased oven proof dish/tin with layer of chees through middle
  6. bake at 170 C for 45mins
Additional Tips
nice with homemade chutney, baked spud and winter leaves
