a biggish jar.

12oz cranberries
6oz sugar
1 large or two small oranges.
5 tbsps port/sweet sherry.

Method/steps

Dissolve sugar in orange juice and 4 tbsps sherry/port.
Add orange zest and cranberries.
Cook until slightly thicker than you want.
Add remaining tbsp of sherry/port.

Additional Tips

Serve with poultry, game, cheese or anything else you fancy really. Probably not smoked mackerel in my view but the choice is yours...
