Lemon and Ginger Curd

about 1&1/2 lb (700g)
  • 3 lemons
  • 8oz (225g) granulated sugar
  • 4oz (100g) butter, cubed
  • 3 eggs + extra yolk if small
  • 2 tsp (10ml) grated fresh ginger
Method/steps
  1. Cook lemons on 100% High for 1 minute.
  2. Grate and squeeze juice. Place rind and juice in a bowl, add sugar and butter.
  3. Cook on 100% High for 3 minutes.
  4. Beat in strained eggs along with the ginger.
  5. Cook on 100% High for 4 minutes, whisk every 45 seconds.
  6. When thick, pour into hot, sterilised jars, cover with a waxed paper disc, seal and store in fridge. Enjoy!
