- 3 lemons
- 8oz (225g) granulated sugar
- 4oz (100g) butter, cubed
- 3 eggs + extra yolk if small
- 2 tsp (10ml) grated fresh ginger

Method/steps
- Cook lemons on 100% High for 1 minute.
- Grate and squeeze juice. Place rind and juice in a bowl, add sugar and butter.
- Cook on 100% High for 3 minutes.
- Beat in strained eggs along with the ginger.
- Cook on 100% High for 4 minutes, whisk every 45 seconds.
- When thick, pour into hot, sterilised jars, cover with a waxed paper disc, seal and store in fridge. Enjoy!
