The trick with clipping a chicken's wings in order to stop it from flying is to unbalance it. No! Not by trying to convince it that it's a duck, but by only clipping one wing so that it struggles to get airborne.

Here are a series of pictures showing how to do it. It really is a simple process that shouldn't cause either the chicken or the poultry keeper any distress. Just take your time doing it the first few times.
